Amish Asparagus Bread
- 3 eggs
- 1 cup oil
- 1-2/3 cups sugar
- 1 cup brown sugar
- 2 teaspoons vanilla
- 2 cups (3/4 pound) asparagus, cleaned and grated
- .3 cups flour
- ¼ teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon salt
- 1 teaspoon soda
- 3 teaspoons cinnamon

- Beat eggs until light and foamy. Add oil, sugar, brown sugar, vanilla and asparagus.
- Mix lightly.
- Whisk together flour, baking powder, salt, baking soda, and cinnamon.
- Add this flour mixture to wet ingredients and blend.
- Bake in greased loaf pan 325 degrees F for 1 hour or until done.
