The Amish Cook: Zucchini Pie
 
 
Ingredients
  • 4 sliced zucchini
  • 1 /4 cup onion, diced
  • 1 /3 cup butter
  • 2 teaspoons parsley
  • 1 /2 teaspoon garlic
  • ½ teaspoon salt
  • 1 /4 teaspoon pepper
  • 1 /4 teaspoon basil
  • 1 /4 teaspoon oregano
  • 2 eggs beaten
  • 2 cups grated Mozzarella cheese
  • 1 cup Monterrey Jack cheese
  • 1 unbaked pie crust
  • 2 tablespoons dry mustard
Instructions
  1. Melt the butter in pan and cook the zucchini and onion over low heat for 10 minutes.
  2. Mix spices and add to zucchini mixture.
  3. Simmer for a few minutes.
  4. Add eggs and cheese to the mixture.
  5. Spread dry mustard into the unbaked pie crust.
  6. Pour zucchini mixture into the crust and bake at 375 for 20 minutes.
