Mennonite Fruit Dessert Squares
 
 
Ingredients
  • Cake layer:
  • 2 cups all purpose flour
  • 2 teaspoon baking powder
  • 1 cup sugar
  • ⅛ tsp salt
  • ½ c butter
  • 1 cup milk
  • 2 beaten eggs
  • 2 tsp vanilla
  • Fruit layer
  • fresh or frozen unsweetened fruit of choice-apples, peaches, berries, apricots, plums, etc.
  • Topping
  • ¼ c melted butter
  • ¾ c all purpose flour
  • ¾ c sugar
  • Blend flour, baking powder, sugar, salt, and butter in a large bowl.
  • Stir in milk, eggs, and vanilla.
  • Spread in a well greased jelly roll pan (17x11x1").
  • Cover with fruit of choice.
  • Combine topping ingredients until crumbly.
  • Sprinkle over fruit and bake at 375 for 30-35 minutes.
  • Yields: 40 squares.
