The Bishop's Hummingbird Cake With Banana Glaze
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups sugar
- 2 tablespoons cinnamon
- 3 large eggs, beaten
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 (8 ounce) can crushed pineapple, undrained
- 1 cup chopped pecans (optional)
- 2½ cups chopped bananas
- BANANA GLAZE
- 3 tablespoons butter, softened
- ½ banana, mashed
- 1½ teaspoons vanilla extract
- 2 cups powdered sugar
- Combine first five ingredients in a large bowl; add eggs, and oil, stirring just until dry ingredients are moistened.
- Add vanilla, pineapple, pecans, and bananas. Fold in with a fork - do not beat.
- Pour batter into greased 9x13 pan.
- Bake at 350 degrees for 50-60 minutes or until toothpick inserted into center comes out clean.
- Combine all ingredients in a small bowl and beat until well mixed.
- Frost cake while hot - the glaze will melt over the cake.
