The Bishop's Hummingbird Cake With Banana Glaze

Ingredients
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups sugar
  • 2 tablespoons cinnamon
  • 3 large eggs, beaten
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 (8 ounce) can crushed pineapple, undrained
  • 1 cup chopped pecans (optional)
  • 2½ cups chopped bananas
  • BANANA GLAZE
  • 3 tablespoons butter, softened
  • ½ banana, mashed
  • 1½ teaspoons vanilla extract
  • 2 cups powdered sugar
Instructions
  1. Combine first five ingredients in a large bowl; add eggs, and oil, stirring just until dry ingredients are moistened.
  2. Add vanilla, pineapple, pecans, and bananas. Fold in with a fork - do not beat.
  3. Pour batter into greased 9x13 pan.
  4. Bake at 350 degrees for 50-60 minutes or until toothpick inserted into center comes out clean.
  5. Combine all ingredients in a small bowl and beat until well mixed.
  6. Frost cake while hot - the glaze will melt over the cake.
