Serves: 20 pounds
Ingredients
  • HOMEMADE DEER SAUSAGE
  • 10 pounds pork
  • 10 pounds venison
  • 6 tablespoons salt
  • 3 tablespoons black pepper
  • 2 tablespoons sage
  • ½ teaspoon red pepper
  • ½ teaspoon nutmeg
  • ½ cup brown sugar
  • 2 /3 cup flour
  • 1 1 /2 tablespoons ground mustard
  • 1 tablespoon garlic salt
  • 1 1 /4 cup water
Instructions
  1. Place ground pork and venison into a very large container.
  2. In a separate bowl, mix dry ingredients and water together and pour over meat.
  3. Mix very well.
  4. Seal in containers and freeze for later use or use this meat to form patties, add to casseroles, or stir into gravies.
  5. If you are making patties, cook until brown on each side over medium high heat, about 10 minutes each side, make sure insides are thoroughly cooked.
