Amish Green Bean Salad

Serves: 6 servings
Ingredients
  • 6 slices bacon, fried and crumbled
  • 1 pound fresh green beans or 1 pint cooked green beans
  • ¼ teaspoon salt
  • ½ cup celery, chopped fine
  • 2 to 3 hard-cooked eggs, chopped
  • 1 small onion, chopped fine
  • Pickles, chopped fine, optional
  • DRESSING
  • 1 tablespoon onion, grated
  • ⅓ cup vinegar
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • Dash of pepper, paprika, and garlic powder
Instructions
  1. Fry bacon until crisp; then crumble.
  2. Add green beans, small amount of water, and salt to bacon drippings.
  3. Cook just until tender.
  4. Mix with celery, eggs, onion, and pickles, if using. Stir in dressing; then serve hot or cold.
  5. DRESSING:Heat ingredients together until boiling.
  6. Pour over green beans immediately or chill and serve over cold beans.
