Amish Mashed Potato Doughnuts

Serves: 2 dozen
Ingredients
  • ½ c. shortening
  • ½ c. sugar
  • 1 tsp. salt
  • 6½ c. flour
  • 3 egg yolks
  • ½ c. mashed potatoes
  • 2 c. scalded milk
  • 2 cakes yeast
  • 1 tsp. nutmeg
  • Glaze:
  • 3 tablespoons water
  • 1 cup powdered sugar
Instructions
  1. Blend shortening into sifted dry ingredients
  2. Combine egg yolks with potatoes.
  3. Add to dry ingredients.
  4. Add yeast to cooled milk.
  5. Gradually blend into other mixture.
  6. Let rise for 40 minutes.
  7. Cut and let rise again.
  8. Roll dough ⅜-inch thick.
  9. Fry in hot fat until each side is golden, about 1 minute on each side.
  10. Mix glaze ingredients in a bowl and then dip hot doughnuts into the glaze and cool.
