Basic Cream Pie

Serves: 1 cream pie
Ingredients
  • 3 cups milk
  • 3 /4 cup sugar
  • 3 tablespoons flour
  • 3 tablespoons cornstarch
  • 3 eggs, separated
  • 2 tablespoons butter
  • 1 /4 teaspoon salt
  • 1 teaspoon vanilla
Instructions
  1. Scald 2 cups milk and sugar.
  2. Meanwhile, beat egg yolks.
  3. Add 1 cup milk, flour, cornstarch and salt.
  4. Stir this mixture into hot milk with wire whip and cook until thickened.
  5. Remove from heat and add butter and vanilla.
  6. Pour into a baked pie shell and cool.
  7. Tap pie with meringue or whipped cream.
