Original Amish Chicken Loaf

Serves: 15 servings
Ingredients
  • 5 pound chicken, cooked and cubed
  • 2 cups of uncooked rice
  • 2 cups bread cubes
  • salt and pepper to taste
  • 2 cups chicken broth
  • 2 cups milk
  • 4 eggs
  • 2 cups of diced carrots (frozen or fresh)
Instructions
  1. Stir and mix all ingredients.
  2. Spoon into a greased baking dish.
  3. Bake at 350 for 1 hour or until a knife comes out clean when inserted into the center of the loaf.
  4. Serve in slices.
