Amish Mashed Potatoes

Serves: serves 16 - 20
Ingredients
  • 6 quarts of potatoes, peeled and cubed
  • 1 1 /2 tablespoons salt
  • 1 /2 cup butter
  • 4 ounces of cream cheese
  • 3 /4 cup evaporated milk (to right consistency. Hint: I use whole milk or cream instead of evaporated milk)
Instructions
  1. Fill a 6 quart kettle with potatoes.
  2. Add 1 1 /2 inches of water and cover with a lid.
  3. Bring to a boil.
  4. Simmer until potatoes are fork tender.
  5. Drain off water.
  6. Mash potatoes until smooth.
  7. Add remaining ingredients and then mash everything together.
  8. A heavy duty mixer also works well instead of mashing by hand)
  9. Melt an additional cup of butter on medium heat.
  10. Continue heating until butter is browned.
  11. Drizzle over mashed potatoes
