Amish Recipe Project: Yoder's Coffeecake
- ½ cup sugar
- 2 large eggs, beaten
- 4 tablespoons (1/2 stick) butter
- 4 cups flour
- 3 tablespoons baking powder
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- ¾ cup whole milk
- Topping
- 1 cup white sugar
- 2 tablespoons molasses
- 2 tablespoons flour
- 2 tablespoons ground cinnamon
- 6 tablespoons melted butter
- ½ cup chopped walnut pieces (optional)
- Preheat oven to 375°F. Grease a 9 by 13-inch baking dish and set it aside.
- Combine the sugar, eggs, butter, flour, baking powder, salt, vanilla, and milk in a large mixing bowl.
- When the mixture has a creamy consistency, spread it into the prepared pan.
- To make the topping, mix all the topping ingredients in a small bowl.
- Sprinkle over the cake batter.
- Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
