Amish Recipe Project: Yoder's Coffeecake

Serves: 1 coffeecake
Ingredients
  • ½ cup sugar
  • 2 large eggs, beaten
  • 4 tablespoons (1/2 stick) butter
  • 4 cups flour
  • 3 tablespoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¾ cup whole milk
  • Topping
  • 1 cup white sugar
  • 2 tablespoons molasses
  • 2 tablespoons flour
  • 2 tablespoons ground cinnamon
  • 6 tablespoons melted butter
  • ½ cup chopped walnut pieces (optional)
Instructions
  1. Preheat oven to 375°F. Grease a 9 by 13-inch baking dish and set it aside.
  2. Combine the sugar, eggs, butter, flour, baking powder, salt, vanilla, and milk in a large mixing bowl.
  3. When the mixture has a creamy consistency, spread it into the prepared pan.
  4. To make the topping, mix all the topping ingredients in a small bowl.
  5. Sprinkle over the cake batter.
  6. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
