The Amish Cook: Schoolhouse Rhubarb Dessert

Ingredients
  • 1 cup butter
  • 2 cups flour
  • 2 cups brown sugar
  • 6 egg yolks
  • 2 cups sugar
  • 3 /4 cup flour
  • 1 cup sweet cream
  • 5 cups rhubarb cut fine
  • 1 /4 teaspoon salt
  • MERINGINUE
  • 6 egg whites,beaten
  • 1 cup sugar
  • 2 tablespoons vanilla
  • Pinch of salt
Instructions
  1. Crumble the first 3 ingredients and press into cake pan.
  2. Mix custard mixture and pour over crust.
  3. Bake at 350 for 40 to 45 minutes or until almost set.
  4. Then cover with meringue.
  5. Bake until meringue is golden brown.
