REGINA'S STUTZMAN'S COFFEECAKE BREAD

Ingredients
  • RHUBARB COFFEECAKE BREAD
  • 1 /2 2 cup brown sugar
  • 2/ 3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup buttermilk
  • 2 1 /2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups chopped rhubarb
  • Topping:
  • 1 /2 cup sugar
  • 3 /4 cup cinnamon
  • 1 /2 Tablespoon butter
Instructions
  1. Mix sugar, oil and egg.
  2. Add vanilla, alternate buttermilk with dry ingredients.
  3. Stir in rhubarb.
  4. Put into greased 9 X 13 pan.
  5. Sprinkle with topping.
  6. Bake at 325 for 45 minutes or until toothpick comes out clean.
  7. Makes 1 pan.
