REGINA'S STUTZMAN'S COFFEECAKE BREAD
- RHUBARB COFFEECAKE BREAD
- 1 /2 2 cup brown sugar
- 2/ 3 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla
- 1 cup buttermilk
- 2 1 /2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups chopped rhubarb
- Topping:
- 1 /2 cup sugar
- 3 /4 cup cinnamon
- 1 /2 Tablespoon butter
- Mix sugar, oil and egg.
- Add vanilla, alternate buttermilk with dry ingredients.
- Stir in rhubarb.
- Put into greased 9 X 13 pan.
- Sprinkle with topping.
- Bake at 325 for 45 minutes or until toothpick comes out clean.
- Makes 1 pan.
