6 Amish Tex-Mex Recipes
 
 
Ingredients
  • 2 chicken breasts
  • salt and pepper to taste
  • 1 tablespon oil
  • ½ cup sour cream
  • ½ cup medium heat salsa con queso
  • 1 4 ounce can mild chllis (hotter if you like)
  • 1 cup shredded cheese
  • 1 /3 cup Mexican mixed cheese
  • 2 roma tomatoes, chunked
  • one avacado, chunked
  • 2 cilantro leaves
Instructions
  1. Cut 2 chicken breasts into cutlets. Sprinkle both sides with salt and pepper to taste. In a skillet, place 1 T of oil and fry cutlets three minutes a side or until lightly browned. Meanwhile, butter an 8x8 pyrex dish. When chicken is done, place in the baking dish. In bowl, mix ½ cup sour cream, ½ cup medium heat Salsa Con Queso, 1 4 oz. can mild chili’s, (hotter if desired), 1 c. shredded cheddar cheese. Mix. Spread over chicken. Sprinkle with ⅓ c. Mexican mixed cheese. Bake 25 minutes at 400 degrees.
  2. Garnish with tomato chunks, avocado chunks, one or two cilantro leaves chopped. .
