Cherry Coffeecake

Serves: 1 cake
Ingredients
  • 1 cup butter or margarine
  • 1 1 /2 cup white sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • Three cups flour
  • 1 1 /2 teaspoon baking powder
  • 1 / 2 teaspoon salt
  • 1 can of cherry pie filling
Instructions
  1. Cream butter and sugar.
  2. Add egg one at a time.
  3. Beat well each time.
  4. Add vanilla.
  5. Sift flour, salt, and baking powder.
  6. Add to butter mixture.
  7. Spread 2 /3 of dough in jelly roll pan 15 X 10 X 1
  8. Cover with pie filling.
  9. Spoon rest of dough on top.
  10. Bake at 350 for 30 to 40 minutes.
  11. Drizzle with the following glaze while still warm:
  12. Melt 3 tablespoons butter, 2 1 /2 cups powdered sugar, enough milk for right consistency
