Queen Elizabeth Cake
- 2 1 /2 cups boiling water
- 1 cup chopped raisins
- 2 1 /2 teaspoons baking soda
- 2 cups sugar
- 1 1 /2 cups butter, melted
- 2 1 /2 teaspoons vanilla
- 3 1 /4 cups flour
- 2 1½ teaspoons baking powder
- 1 1 /2 teaspoons salt
- Pour boiling water over raisins.
- Add baking soda.
- Let set while following is mixed:
- Mix sugar, butter, vanilla, flour, baking powder, and salt.
- Then add the first mixture and bake at 350 - 375 for 30 minutes or until toothpick comes out clean.
