Barbecue Meatballs For a Crowd
 
 
Serves: 630 meatballs
Ingredients
  • 45 pounds ground beef
  • 15 5 ounce cans of evaporated milk
  • 7 1 /2 quarts quick oats
  • 7 cups chopped onions
  • 10 tablespoons salt
  • 3 1 /2 teaspoons pepper
  • 30 eggs.
  • Sauce:
  • 7 1 /2 quarts catsup
  • 4 quarts brown sugar
  • 5 tablespoons liquid smoke
  • 7 cups onions (optional)
Instructions
  1. Mix all ingredients together.
  2. Shape into 1 1 /2 to 2-inch balls.
  3. Put on cookie sheets to prebake.
  4. Fix 2 layers of 45 balls to each layer (90 meatballs to a roaster).
  5. Pour 4 cups sauce over top and bake at 350 for 1 hour.
  6. Makes approximately 630 balls and fills 7 roasters and serves 300 people.
