Santa Fe Roasted Potatoes
 
 
Serves: serves 6
Ingredients
  • 2½ pounds red-skinned potatoes
  • 1 tablespoon finely chopped garlic
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • 1 /4 teaspoon pepper
  • 1 /2 teaspoon salt
  • 2 dashes cayenne pepper
  • ¼ cup vegetable oil
Instructions
  1. Cut potatoes into 1-inch cubes
  2. Place them in a greased 9 X 13 inch baking pan.
  3. Combine the remaining ingredients.
  4. Pour over potatoes and toss to coat.
  5. Bake uncovered for 1 hour, stirring every 15 minutes.
