Santa Fe Roasted Potatoes
- 2½ pounds red-skinned potatoes
- 1 tablespoon finely chopped garlic
- 1 teaspoon oregano
- 1 teaspoon chili powder
- ½ teaspoon cumin
- 1 /4 teaspoon pepper
- 1 /2 teaspoon salt
- 2 dashes cayenne pepper
- ¼ cup vegetable oil
- Cut potatoes into 1-inch cubes
- Place them in a greased 9 X 13 inch baking pan.
- Combine the remaining ingredients.
- Pour over potatoes and toss to coat.
- Bake uncovered for 1 hour, stirring every 15 minutes.
