AMISH FRIED CHICKEN
 
 
Ingredients
  • For chicken
  • • 8 or 9 pieces of chicken
  • • Salt
  • • Melted butter and oil for coating chicken
  • For coating
  • • 20 ounces Bisquick
  • • 1 cup chicken coating from bulk food store
  • • 2½ cups "runion" mix (a bulk seasoning mix similar to Shake 'n Bake available at Amish country stores)
  • • ½ tablespoon paprika
  • • 1¼ pounds Gold Medal flour
  • • 1 tablespoon garlic salt
  • • 1 ounce seasoned salt
  • • ¼ cup white sugar
Instructions
  1. Trim off fat, and salt the chicken overnight.
  2. Prepare coating by mixing dry ingredients together in a large paper sack.
  3. Set aside.
  4. Roll the chicken pieces 3 at a time in some melted butter and oil and then drop into a sack and shake to cover.
  5. Place on a plate until all pieces are coated.
  6. Fry to a golden brown in butter and oil.
  7. Set aside.
  8. Pour a glass of water into the bottom of a roaster and cover with a piece of tin foil. Put chicken on top of tin foil and cover with another layer of foil. Take a pencil and punch 10 to 12 holes in the top layer of foil.
  9. Place in a 350-degree oven, and bake for 2 hours.
