Canadian Food Fun: Butter Tart Muffins
- ¾ cup white sugar
- ½ cup butter cut into pieces
- 2 eggs, slightly beaten
- ½ cup milk
- 1 tsp. vanilla
- 1½ cups raisins
- 1½ cups flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- Cook above ingredients in saucepan over medium heat and cook stirring constantly, until slightly thickened and beginning to bubble.
- Remove from heat
- Stir in
- Place sauce pan in fridge for 10 minutes without a lid to help cool
- Mix in bowl flour, baking soda, and powder in a bowl.
- Stir in cooled cooked mixture, mixing everything well.
- Fill lightly greased muffin tins. Bake for 15 minutes or until cake taster comes out clean.
- Remove from oven
- tablespoons of maple syrup to be brushed over the tops of all the muffins. Makes 12.
