Canadian Food Fun:  Butter Tart Muffins
 
 
Ingredients
  • ¾ cup white sugar
  • ½ cup butter cut into pieces
  • 2 eggs, slightly beaten
  • ½ cup milk
  • 1 tsp. vanilla
  • 1½ cups raisins
  • 1½ cups flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
Instructions
  1. Cook above ingredients in saucepan over medium heat and cook stirring constantly, until slightly thickened and beginning to bubble.
  2. Remove from heat
  3. Stir in
  4. Place sauce pan in fridge for 10 minutes without a lid to help cool
  5. Mix in bowl flour, baking soda, and powder in a bowl.
  6. Stir in cooled cooked mixture, mixing everything well.
  7. Fill lightly greased muffin tins. Bake for 15 minutes or until cake taster comes out clean.
  8. Remove from oven
  9. tablespoons of maple syrup to be brushed over the tops of all the muffins. Makes 12.
