Susan's Rhubarb-Custard Pie
 
 
Ingredients
  • 1 unbaked (9 in.) pie shell 2 cups diced rhubarb
  • 1 TBL melted butter 1 cup sugar
  • 2 TBL flour
  • 2 eggs
Instructions
  1. Cover rhubarb with boiling water and allow to stand for 5 minutes. Pour off water and pour rhubarb into pie shell. Combine remaining ingredients in blender and blend until well mixed. Pour over rhubarb. Bake at 425 for 10 minutes. Reduce heat to 350 for 30 minutes.
