For those of you that have a surplus of apples, this sounds like a great recipe. Â Comes to me from an Amish woman in Michigan's "apple country." Â As is often the case with these authentic Amish recipes it is a little spare on instructions, but it sounds delicious!
2 cups flour
1 egg
1 teaspoon baking soda
1 /4 cup apple juice
1 1 /3 cup brown sugar
1 /2 cup shortening
1 /2 teaspoon salt
1 /4 teaspoon cloves
1 1 /2 cup apples, finely chopped
1 teaspoon cinnamon
Drop by teaspoonfuls on baking sheet. Bake at 400 for 10-15 minutes. Â Top with the following icing:
1 1 /2 cups powdered sugar
3 tablespoons butteer
3 tablespoons cream
3 /4 teaspoon vanilla

I made the Apple Cookie recipe out of The Amish Cook's Baking Book. They were delicious. I did make a note to myself on the page that I have to dice the apples smaller the next time I make them.

I made the apple cookies today and they are very good. I didn't dice the apples. I chunked them and threw them in my blender, skins and all. A bit of pulsing and they were finely diced.

I baked the apple cookies today, and I think this is an excellent recipe. In my oven, 13 minutes is about right, 15 minutes is just a bit too long, and I used a silpat sheet. I diced the apples apprx 1/4" dice, it worked well.
Excellent flavor and texture, even before the icing, but that made them even better.
