    Friday Favorites: Amish Oatmeal, Turkey Omelette, Deacon's Mashed Potato Cake, and Wickey's Variety Store

    I hope everyone's bellies are full and you're got family and friends to hang out with.  I wanted to share a few Friday favorites, though,to help use up holiday leftovers and a couple of other fun posts.

    TURKEY OMELET:  I'm not sure how I feel about this.  Leftover turkey should be on a sandwich or maybe in a casserole, but in an omelet?  Some Amish cooks use it that way.  So here is a recipe for a "turkey omelet" to use up some of your leftovers.  Click here for the recipe.

    DEACON'S MASHED POTATO CAKE:  Have a bowl full of leftover mashed potatoes in your fridge?  You can drown them in butter and salt like I do, heat and enjoy! Or you can make them into cake.  Check out this Amish recipe.

    WICKEY VARIETY STORE:  It was almost a year ago to the today that I visited this very remote Amish outpost in rural, rural southeast Indiana.  Truly an authentic Amish experience, so if you are near SE Indiana, check this out!

      I like to make fried potato cakes and potato soup out of my leftover mashed potatoes. In fact, I made more than I needed yesterday, just so I can make soup tonight. It is cooling as I type this.. hope you had a wonderful Thanksgiving Kevin.
