SIGH, who needs a veggie on the Thanksgiving table? We all know it's about the stuffing, the rolls, the mashed potatoes....oh, okay....if we must do a vegetable, there are a couple that are worth taking a look at. These green beans by our Amish Cook columnist are amazing tasting and looking!
Gloria's Green Beans
GLORIA'S GREEN BEANS
- Half pound bacon
- 1 medium onion, chopped
- 1 handful mushrooms cut-up
- 1 /2 bell pepper, diced
- 1 quart green beans, drained
- Any seasonings that strike your fancy ( seasoning salt, garlic powder, oregano, and lemon pepper are good options)
- Cheese of your choice
Cut bacon into bite-sized pieces, fry until almost done (do not drain drippings). Add onions, mushrooms, and peppers and sprinkle with seasonings. Fry until onions are tender then stir in green beans and seasonings to taste.
Continue to fry until beans are hot and sprinkle with cheese.
AMISH GREEN BEAN CASSEROLE
1 qt green beans, drained
4 large potatoes, diced
½ finely grated onion
2 teaspoon salt
Make white sauce with:
2 c milk
½ c flour
While boiling, add ½ lb soft cheese. Pour over mixture of beans and potatoes. Bake at 300 degrees for 2 hours.
