    Homemade Amish Breakfast Burritos

    BREAKFAST BURRITOS: I like to re-run this recipe every once in awhile because it is very popular with readers and symbolizes the evolution of Amish cooking. This particular dish - popular in Amish households - encapsulates many changes found in Amish kitchens.   First, the influence of Tex Mex cooking on Amish cooking is undeniable. Salsas, burritos, tacos, and jalapenos are just the first influences off-the-top of my head that I see making their way into Amish recipes.  The second trend this recipe captures is the influence of pop culture on Amish cooking.  McDonald's is, I believe, the first fast-food chain to market a "breakfast burrito", but now they are found on many menus.  Lastly, this meal also symbolizes the Amish need for quick, convenience type food.  Just because you travel by slower horse and buggy doesn't mean you don't need a quick meal! The beauty of breakfast burritos is that they can be made ahead of time and frozen for a quick on the go meal. And, believe me, these homemade versions are far tastier than the restaurant ones!

    BREAKFAST BURRITOS

    Serves: serves 10
    Ingredients
    • 2 pounds of bacon, cooked and crumbled
    • 8½- inch flour tortillas
    • 1 /2 cup diced green peppers
    • 1 /2 cup chopped mushrooms
    • 1 /4 cup chopped onions
    • Eggs, two large eggs per tortilla
    • 10 Cheddar cheese slices
    Instructions
    1. Preheat oven to 350.
    2. In a large skillet over medium heat fry together pepper and onions, and drain.
    3. Stir in crumbled bacon.
    4. In a separate skillet, scramble the eggs
    5. Lay tortillas in the center of a square of foil. In the center of the tortilla put slices of cheese, then put a layer of meat mixture and top with scrambled eggs.
    6. Fold the burritos by wrapping in tin foil. Bake at 350°F until hot, about 10 to 15 minutes.
    7. Serve with sour cream and salsa.

      anything is better than fast food...
      I make something similar ....but without the bacon and cheese....
