    Homemade Apple Bars

    We're past the prime of apple season, but, what the heck, apples can be enjoyed year-round.  Amish cooks home can apples and store apples so that they can be enjoyed year-round in sauces, cakes, bars, and pies.  This is a recipe that is nice around Christmas with the sweet taste and easy-to-follow recipe.  The walnuts add a crunch to them, but you can easily leave them out if you wish. These are some bars my parents made over the weekend.  The recipe is included in our first cookbook, Amish Cook at Home.

    APPLE BARS

    3 eggs

    1 cup cooking oil

    1 3 /4 cups sugar

    2 cups flour

    1 /2 teaspoon salt

    1 /2 teaspoon cinnamon

    1 teaspoon soda

    2 cups peeled, chopped apples

    1 cup chopped nuts

    Preheat the oven to 350°F. Grease a 11 x16-inch baking pan.

    Beat the eggs, oil, and sugar together in a large mixing bowl.  When the mixture is smooth, add the flour, salt, cinnamon, baking soda, and apples. Mix well and pour into the pan..  Bake for about 35 to 40 minutes or until firmly set, like a brownie.   

     

    Makes 25 to 30 bars
