    Homemade Cinnamon Pie Coffeecake

    Cold winter days call for heartier food fare.  Amish kitchens percolate to life with hearty, thick soups and simmering pot roasts.  Mornings and evenings are often spent by the warm of a wood-stove.  Coffeecakes and freshly baked bread are winter staples in Amish homes.   Try this wonderful coffeecake recipe on one of these upcoming cold winter mornings!

    Cinnamon Pie CoffeeCake

    Ingredients
    • ¾ cup warm water (about 105 degrees F)
    • 1 package dry yeast
    • ⅓ cup sugar
    • 1 teaspoon salt
    • 2¼ cups all-purpose flour, divided for use
    • 1 egg
    • ¼ cup lard (or shortening)
    • About 2 teaspoons margarine
    • Brown sugar and cinnamon for topping
    Instructions
    1. Dissolve yeast in warm water.
    2. Let stand a few minutes, then stir.
    3. Stir in sugar, salt and 1 cup of the flour.
    4. Beat the egg, add lard (softened or melted and cooled) and the
    5. egg to the flour mixture.
    6. Beat in the remaining flour until mixture is smooth.
    7. Drop by spoonfuls into a greased 9 inch pie pan.
    8. Let rise in a warm place until dough is nearly doubled.
    9. Dot top of dough with tiny slivers of margarine, then sprinkle with brown sugar and cinnamon. Bake 30 minutes at 375 degrees. Delicious!
