Mennonite Cucumber Salad


  • 2 cucumbers or 1 English cucumber
  • 1 small onion
  • 1 tsp. salt
  • 3 Tbsp. white sugar
  • 3 Tbsp. white vinegar
  • pepper to taste
  1. Thinly slice the cucumbers and onion.
  2. Separate the onion into rings.
  3. Add the salt, sugar, vinegar and pepper.
  4. Mix thoroughly, cover, then allow to marinate in the refrigerator for at least 3 hours.
  5. It is best if made a day before serving.
  6. Stir it several times while it is marinating.

    Cucumber Salad…lot like mine but as Granny made it we sliced them thin then marinated in salt water for an hour or so, drained most of that off then added vinegar mixture. I keep a container of the vinegar in the frig at all times, use it also for a Cole Slaw dressing. So easy to make when buying the already shredded cabbage oh yea also add some onion and green pepper.

      Your Granny’s version sounds good! And thanks for the info on the Tri-County Mall, I had no idea the retail area was that old. Interesting!
