Mennonite Cucumber Salad
- 2 cucumbers or 1 English cucumber
- 1 small onion
- 1 tsp. salt
- 3 Tbsp. white sugar
- 3 Tbsp. white vinegar
- pepper to taste
- Thinly slice the cucumbers and onion.
- Separate the onion into rings.
- Add the salt, sugar, vinegar and pepper.
- Mix thoroughly, cover, then allow to marinate in the refrigerator for at least 3 hours.
- It is best if made a day before serving.
- Stir it several times while it is marinating.
