    Mrs. Stutzman Series: Underground Ham Casserole

    This is another recipe in the Mrs. Stutzman series. I have a couple of more that this talented Amish cook in Ohio sent us, so I'll be sharing them in the weeks ahead.  This sounds like a perfect weekend recipe.  This recipe seems to be popular in Amish kitchens, although I am not sure why it is called "Underground."

    Mrs. Stutzman suggests the following variation:

    "Instead of ham, use pre-cooked chicken breast and also precooked (not too soft) broccoli and cauliflower.  Delicious!"

    Ingredients
    • 4 cups chunked ham
    • 4 tablespoons margarine
    • 1 /2 cup chopped onion
    • 1 tablespoons Worcestershire sauce
    • 2 cans cream of mushroom soup
    • 1 cup milk
    • 2 cups cubed Velveeta
    • 4 quarts mashed potatoes
    • 16 ounces of sour cream
    • brown crumbled bacon
    Instructions
    1. Combine ham, margarine, onions and Worcestershire sauce and coo until onions are tender.
    2. Place in bottom of a medum size roasting pan.
    3. In a saucepan heat together soup, milka nd cheese until cheese is melted.
    4. Place over top of ham mixture.
    5. Mash cooked potatoe, using no salt or milk and mix with sour cream.
    6. Spread over top of mixture and sprinkle with bacon.
    7. Bake at 350 for 20 minutes or until hot.

      Hi Kevin

      Even before I read your article on the Shakers I have been on your website before and really enjoyed it.

      After reading the Al Jazeera article on the Shakers I have to tell you that Arnold really pulled the wool over your eyes. Or maybe not maybe you could see through him.

      I once lived with the Shakers 2005 - 2007. I left because I could not bear to live with Arnold or Francis any longer. The abuse I suffered at their hands was totally out of context of the Shaker life I had studied since I was 12 and when I went to live with them I was 48.

      I will always enjoy your Amish website but your article on the Shakers only perpetuates the Shaker brand as Arnold and Francis have created.
