    No-Mess Amish Caramel Pie

    This is a recipe I first came across in the Amish settlement of Aylmer, Ontario.  I had always wanted to make it - and try it - before but the idea of the caramelly mess on the bottom of a saucepan always scared me away.  But, turns out, I was unnecessarily scared.  Friends Paula and Jay tried making it this weekend and said the stainless steel pan was easy to clean.  The generous amounts of brown sugar in the pie might send a super sweet signal, but Jay it was not overpoweringly so.

    Anyway, try this amazing recipe. I might have to stop by Paula and Jay's!

    Delicious no-mess caramel pie

    Delicious topped with Ready Whip, Cool Whipped or homemade whipped cream

     

    No-Mess Amish Caramel Pie

    Ingredients
    • 3 cups brown sugar
    • 3 cups water
    • 2 tablespoons butter
    • 1 cup flour
    • 3 cups milk
    • 6 egg yolks
    Instructions
    1. Boil brown sugar, water and butter together for 2 or 3 minutes for a good strong caramel flavor. In a separate bowl, mix flour, milk, and egg yolks. Slowly stir the flour mixture into the still boiling syrup, stirring constantly until it comes to a re-boil. Allow to boil for 1 minute and then remove from the heat; cool 5 minutes and stir once. Pour into 2 baked pie shells. Allow pie to cool and top with whipped cream.
