Wow, amazing Orange Juice Cake.  Citrus fruits are considered a real treat in Amish and Mennonite communities because, traditionally, they just were not very plentiful. The average Amish bulk food store did not stock oranges and tangerines and the like, but as more and more Amish shop in traditional supermarkets, fresh citrus is becoming more common in Amish kitchens.
I still have not posted about this really neat Mennonite bakery that I visited last week. I think I'll save it for next week. Â But I did pick up a homemade "orange juice" cake while I was there. Â Yum. Yum. Yum. Â Orange juice cakes, if you have never had one, Â have a strong citrus taste. Â I really like a citrus cake, it's a nice, sweet alternative to chocolate.
This recipe comes from an Amish woman in Holmes County, Ohio. Â I'm sure it's similar to the one used in the Mennonite bakery. Â They all follow pretty much the same formulation. Â I cake I bought was in a loaf pan and most of the recipes I see call for tube (Bundt) pans, but I think it would turn out fine either way.
AMISH ORANGE JUICE CAKE

- 1 yellow cake mix
- ½ cup oil
- 4 eggs
- 1 box vanilla pudding (4 - serving instant)
- 1 cup orange juice
- Sauce:
- ½ cup butter
- 1 cup orange juice
- 1 cup sugar
- Preheat oven to 350 degrees F. Grease a Bundt Pan.
- Mix all the cake ingredients until smooth and put in pan.
- Bake the cake for 45 - 50 minutes.
- Just before the cake is done, mix up the sauce ingredients in a saucepan and boil for 3 minutes.Pour sauce over the cake in the pan, after removing it from the oven.
- Let cake cool for 30 - 45 minutes,then remove from pan.

It took me a while to follow the directions. Kind of confusing.

I agree with Saundra Wood. The recipe says pour sauce over the cake twice! Which one is correct? I want to make this for my lady at Bible Study but now I'm afraid I'm going to mess it up because the instructions are so confusing.
