CAPTION: Rosanna's perfect pie crust.
By Kevin Williams
Pies.
For me, I think I would like cake or cookies more than pie, BUT, pie done right...well, it doesn't get much better than that. A crust that cuts nicely, and a pie packed with real fruit, not the sugar slurry which find in mass-produced pies....if the pie is done right, well, then I don't think there is much better than a pie done right and here are a bunch of recipes for Amish pie perfection that will be sure to send your picnic into the stratosphere. But, first, we have to begin with the crust. A perfect pie begins with a perfect crust.
- 1 cup of shortening
- 3 cups flour
- 1 teaspoon salt
- 1 /3 cup cold water
- 1 tablespoon vinegar
- 1 egg
- Cut shortening into flour and salt and mix until crumbly.
- Stir in water, vinegar, and slightly beaten egg.
- Chill dough.
- Roll to desired thickness and place into pie pans.
