    Pies For Your Holiday Weekend, Crust and All!

    Pies.

    For me, I think I would like cake or cookies more than pie, BUT, pie done right...well, it doesn't get much better than that.  A crust that cuts nicely, and a pie packed with real fruit, not the sugar slurry which find in mass-produced pies....if the pie is done right, well, then I don't think there is much better than a pie done right and here are a bunch of recipes for Amish pie perfection that will be sure to send your picnic into the stratosphere.  But, first, we have to begin with the crust.  A perfect pie begins with a perfect crust.

    Rosanna's Perfect Pie Crust

    Ingredients
    • 1 cup of shortening
    • 3 cups flour
    • 1 teaspoon salt
    • 1 /3 cup cold water
    • 1 tablespoon vinegar
    • 1 egg
    Instructions
    1. Cut shortening into flour and salt and mix until crumbly.
    2. Stir in water, vinegar, and slightly beaten egg.
    3. Chill dough.
    4. Roll to desired thickness and place into pie pans.

    And, now, for our parade of pies!

    Let's start out this pie pageant with a twist on an old Amish favorite: Raisin Pie, BUT, this is Raisin Nut Pie.  I love raisin pie, adding a nutty texture and flavor to it I bet sends the pie through the roof flavor-wise!

    Raisin Nut Pie

    Serves: 1 pie
    Ingredients
    • 2 eggs, separated
    • ¾ cup sugar
    • 1 /4 cup butter, melted
    • 1 1 /2 tablespoons flour
    • ½ teaspoon cloves
    • 1 /4 teaspoon cinnamon
    • Pinch of salt:
    • 1 /2 cup light corn syrup
    Instructions
    1. Put raisins in bottom of pie shell.
    2. Mix together egg yolks, sugar, butter, flour, and spices.
    3. Add syrup, water, vinegar, and nuts.
    4. Fold in beaten egg whites and then our over the raisins.
    5. Bake at 425 for 30 minutes

    Caramel Custard Pie

    Ingredients
    • 1 cup sugar, scant
    • 1 tablespoon flour, heaping
    • 2 cups milk (half cream)
    • 2 eggs
    • 1 /2 teaspoon maple flavoring
    • pinch of salt
    • nuts
    Instructions
    1. Mix flour, sugar, egg yolks, maple, and salt.
    2. Add cream to make a thin batter.
    3. Scald milk and cool.
    4. Add to other ingredients.
    5. Beat egg whites until they form soft peas.
    6. Fold into the remaining ingredients.
    7. Sprinkle with nuts.
    8. Bake at 325 until done.

    Apple pies are generally thought of as an autumn phenomena, but they really can be enjoyed year-round.  Memorial Day weekend is a good weekend for apple pie, how about trying this twist on apple?

    Caramel Crunch Apple Pie

    Serves: 1 pie
    Ingredients
    • Topping:
    • 1 /4 cup flour
    • ⅓ cup brown sugar, packed
    • 2 tablespoons butter, softened
    • 1 /2 teaspoon cinnamon
    • Pie:
    • 6 cups sliced, peeled baking apples
    • 1 tablespoon lemon juice
    • 1 /2 cup sugar
    • 3 tablespoons flour
    • 1 /2 teaspoon cinnamon
    • 28 caramels
    • 5 ounces evaporated mil
    Instructions
    1. Combine topping ingredients: spread in ungreased 8" pan.
    2. Bake at 400 for 6-8 minutes or until golden brown.
    3. Cool.
    4. Crumble and set aside.
    5. Sprinkle apples with lemon juice.
    6. Combine sugar, flour, and cinnamon, and toss with apples.
    7. Place in an unbaked 9 inch pie shell.
    8. Cut a circle of foil to over apples but not edge of crust.
    9. Place over pie.
    10. Bake at 425 for 10 minutes.
    11. Reduce heat to 375 and bake for 25 minutes or until apples are tender.
    12. Meanwhile, in saucepan over low heat, melt caramels with milk, stirring frequently.
    13. Remove foil from pie.
    14. Pour caramel mixture over apples.
    15. Sprinkle with topping and return to oven for 5 minutes.
    16. Serve warm.

    There's nothing better than butterscotch, at least in my book.  Er, website.  So try this Amish classic for "browned butterscotch pie"

    Browned Butterscotch Pie

    Ingredients
    • 2 tablespoons butter
    • 1 cup brown sugar, packed
    • ⅔ cup hot water
    • 2 tablespoons flour
    • 3 tablespoons cornstarch
    • ½ teaspoon salt
    • 2 egg yolks
    • 2 cups milk
    • 1 teaspoon vanilla extract
    Instructions
    1. Brown the butter in a heavy saucepan.
    2. Add the brown sugar and stir it until it is melted.
    3. Add the hot water and cook the syrup until all the lumps disappear.
    4. Mix together the flour, cornstarch, salt, egg yolks and milk, then slowly stir this mixture into the hot syrup.
    5. Boil it until it thickens, then add the vanilla.
    6. Pour it into a baked pie shell and top it with meringue.

    Thick Milk Pie

    Ingredients
    • 3 eggs
    • 1 cup molasses
    • 1 cup granulated sugar
    • ½ cup all-purpose flour
    • 1 teaspoon baking soda
    • 3 cups thick sour milk
    • 2 (9-inch) unbaked pie shells
    Instructions
    1. Beat eggs.
    2. Add molasses.
    3. Combine sugar, flour and baking soda and add to egg mixture.
    4. Add thick milk.
    5. Pour into unbaked pie shells.
    6. Bake for 10 minutes; then reduce oven temperature to 325 degrees F and bake for 40 to 45 minutes.

    Vanilla Pie is an amazing pie and it is perhaps one of my favorite Amish pies of all time.

    Vanilla Pie

    Ingredients
    • ½ cup firmly packed brown sugar
    • 1 tablespoon flour
    • ¼ cup dark corn syrup
    • 1½ teaspoons vanilla extract
    • 1 egg, beaten
    • 1 cup water
    • 1 cup flour
    • ½ cup firmly packed brown sugar
    • ½ teaspoon cream of tartar
    • ½ teaspoon baking soda
    • ⅛ teaspoon salt
    • ¼ cup butter
    • 1 unbaked 9-inch pie shell
    Instructions
    1. Combine first 5 ingredients in 2-quart saucepan.
    2. Slowly stir in water.
    3. Cook over medium heat until mixture comes to a boil, stirring constantly. Let cool.
    4. Combine remaining ingredients (except pie shell) and mix until crumbly.
    5. Pour cooled mixture into pie shell and top with crumbs. Bake at 350 degrees F for 40 minutes or until golden brown.
