A homemade pizza cookie. Use a pizza cutter to make triangular wedges

Pizza cookies are a favorite in Amish kitchens. And there are multiple variations of this recipe. The variation I first became acquainted with consisted of a bunch of little cookies with colorful candies on them (gumdrops, etc) to resemble little pizzas.
But another pizza cookie recipe involves rolling out the "crust", flattening it onto a pizza stone or pan and baking it in the oven and then using a cutter to create triangular wedges. This is the one that Aster and I attempted last weekend. Aster, who is about 2 1 /2, enjoys standing on a chair in the kitchen with me and "helping" with recipes. I'll measure out the ingredients and let her dump it into a bowl. With this recipe she also had fun helping me press out the "crust" onto the pizza stone. And, of course, her favorite part was probably helping to eat it when we packed a picnic lunch and took it to the playground
While Aster loved the pizza cookie, she liked the swing even more!
I definitely recommend this recipe as a fun, easy dessert to make with kids and eat with anyone! Yum! Give the recipe below a try!
- ½ cup granulated sugar
- ⅓ cup brown sugar
- ½ stick butter
- 1 egg
- ½ cup peanut butter
- 1 teaspoon vanilla
- 1½ cups flour
- Topping:
- 1 cup chocolate chips
- 2 cups miniature marshmallows
- Preheat oven to 375
- Mix the granulated sugar, brown sugar, and butter together.
- Add the egg and mix in well.
- Mix in the peanut butter and vanilla.
- Add the flour and mix well.
- Press or roll dough on a 15-inch pizza pan, going all the way to the edge of the pan.
- Bake at 375 degrees for 10 minutes.
- Remove from the oven and sprinkle the chips and marshmallows over the top.
- Return to the oven for 5 to 8 minutes until topping starts to melt.
- Cut when completely cooled.

Aster is a darling little girl! I am sure she will be a "good cooker" as we always called the kids when they liked to cook!
She has a pretty good teacher, don't you think? The cookie pizza looks scrumptious.
