Sheesh, I have enough Amish recipes sent to me from various Amish cooks across the country that I could fill a gazillion three ring binders. Sometimes it's just fun to randomly reach into the pile and share a couple. For me, just as fun as the recipe itself is the handwriting its written in: sometimes bubbly and perky, other times chicken scratch, other times beautiful, artful script. The first recipe for "Chocolate Logs" comes to us from the Amish settlement of Aylmer, Ontario. Not quite sure what "chocolate coating" refers to, I'm thinking a semi-sweet chocolate for melting. Anyone have any ideas?
The second recipe which comes from an Amish settlement in Kentucky is just your basic, good hearty pizza casserole (of which are very, very popular in Amish kitchens), but what I like about this one is that it can be prepared on the stove-top as a type of "goulash" instead. Now, THAT sounds awesome!:)
- 3 cups powdered sugar
- 1 1 /2 cups peanut butter
- 1 cup melted butter
- 3½ cups Rice Krispies Cereal
- 1 cup coconut
- 2 cups chocolate coating
- Mix together all the ingredients.
- Roll into little logs and put in pan in rows.
- Melt chocolate coating.
- Put a layer of chocolate onto each log.
- Pout in cool place until chocolate hardens.
- 3 cups cooked macaroni
- 1 pound hamburger
- 1 small onion, diced
- 4 ounces pepperoni, cut small
- 1½ cups pizza sauce
- 1 teaspoon oregano
- 2 cups cheese
- Brown hamburger and onion.
- Mix with remaining ingredients and bake at 350 for 30-40 minutes uncovered.
- May be made on top of stove as a goulash. Just heat in a bit pot on medium for an hour covered.

Chocolate coating is like baking chocolate or similar to almond bark. The stores here sell some brands labeled chocolate coating. It comes in vanilla and white choc. too. You can use it in all sorts of candies and other things.

The chocolate coating is probably chocolate "almond bark" usually used to dip and coat pretzels.
