    Refreshing Frosty Strawberry Dessert

    Strawberries are a go-to spring staple among the Amish. But their use also stretches into hot summer days when nothing tastes better than a cold dessert.  Think strawberry shortcake, strawberry popsicles, or this Refreshing Frosty Strawberry Dessert.

    More and more Amish homes have access to some type of electricity.  And some conservative Mennonites have had it for longer.  By adopting off-the-grid electricity, like solar, the Amish can “cherry pick” certain technologies, like freezers and refrigerators without being looped into the larger grid which could bring in all sorts of unsavory things.

    Because freezers are more and more common among the Amish, you are seeing more and more favorite recipes that are frozen, like this Refreshing Frozen Strawberry Dessert.  Other recipes that are becoming more common among the Amish are things like cheesecakes.  That said, Old Order Amish have had ice-houses for centuries and those do a pretty good job of keeping foods frozen.  I’ve stuck my head into an Amish icehouse in the middle of summer and been impressed by the Arctic blast that awaited me.

    More and more Amish are choosing to profit off the public's love for berries by opening their own u-pick patches. One of my favorites is Rainbow Gardens in Holton, Maine, run by the Yoder family. Delicious, ripe red berries. Of course, being in Maine, their strawberry season starts a little later than the rest of the country!

    Many Amish have their own homegrown strawberries to choose from. Wash them well and sliced them up and you can make this super dessert!

    The other star of this show is sugar. Strawberries and sugar go together like pancakes and syrup!

    Whipped cream is another part of this recipe. You can whip your own cream with an electric mixer or cut corners and use store-bought.

    Use a very large bowl because the mixture will really "puff" up once you beat it.

    Many Amish homes now have freezers powered by solar or generator.

    You can pour the strawberry mixture into individual dishes, freeze, and serve, or just use one big pan, like a 9 X 13 metal pan, freeze it, and cut into squares and serve. That is sometimes easier than finding a bunch of dishes to freeze.

    🍓Refreshing Frosty Strawberry Dessert

    2 egg whites
    1 c. sugar
    2 c. crushed fresh strawberries
    1 c. whipping cream

    📋Instructions

    1. Beat together egg whites, berries and sugar for 10 minutes in a large bowl.
    2. Make sure the bowl is very large because the mixture will triple in size.
    3. Whip cream and fold into mixture.
    4. Stir until well-blended.
    5. Pour into molds or pan and freeze and least 6 hours.

    Ingredients

      I need to make something sweet this week & this will fit the need. Thanks for sharing it Lovina. Glad you're feeling better, nothing worse than trying to get through church when coughing!! I usually take some cough drops with me. I went to Pennsylvania, this past Saturday for a wedding of a cousin of mine & sure wnough, had to use the cough drops.

        Kevin, I made this pie the other day & baked it according to direction, it's very soupy. Should it be baked longer??
