Super side! Amish Four-Bean Baked Beans
Headed for a Memorial Day weekend picnic? As noted, the three-day holiday weekend is popular with Amish to take advantage of the extra day off to go fishing, grill out, have a picnic and food is always part of the equation. Here are some quick and easy side salads to round out any outdoor gathering!
This first recipe comes from a Mennonite woman, she tells me it is a very quick, flavorful salad with a little zing. Must be those Fritos!
MEXICAN CORN SALAD
4 cups corn, drained and cooled
1 /2 cup red pepper, chopped
1 cup mayonnaise
1 /2 cup green pepper, chopped
1 cup shredded cheddar cheese
2 cups crushed chili-cheese Fritos
Mix all ingredients except Fritos. Chill for a couple of hours. When ready to serve, mix in the Fritos.
This next one looks interesting, you could almost have it as a meal, an Amish woman in Ohio sent it to me, she says it is best while the meat is still warm.
