Nothing flashy about this recipe but I bet it is super tasty, well, that is probably why they named the recipe, simply, "Tasty Pancakes." This recipe comes to us from an Amish woman in Colorado. The Amish settlement in the Sangre de Cristo Mountains of Colorado is probably tops on my list of communities I'd like to someday visit but haven't yet.
An Amish cook there was nice enough to share this easy recipe which is a staple of their breakfast routine.
There is a note with the recipe that says "if sweet milk is used, omit soda and increase the baking powder to 3 teaspoons.", so bear that in mind.
- 2 beaten eggs
- 2 cups sour milk
- 1 teaspoon soda
- 2 1 /4 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 4 tablespoons melted butter
- 2 teaspoons sugar
- Beat eggs until light.
- Add milk.
- Sift flour with baking powder, salt and sugar.
- Beat flour mixture into egg and milk mixture.
- Add melted butter.
- Beat until smooth.
- Make in hot iron pan.
- Serve with hot maple syrup and sausage.
