Those of you on my email list (sign-up if you aren't on it!) know that I have been battling my weight this year (my weight is winning, unfortunately). Well, one of my food weaknesses is the breakfast sandwich. Mmmmm, there is just something comforting about a warm egg smothered with melted cheese and perhaps a spritz of hot sauce or maybe mayo between two slices of an English muffin or a bagel or a biscuit. A carefully crafted egg sandwich is the perfect comfort food.
So when Rachel made some delicious biscuits for our supper the other night, I saved the leftovers to make breakfast sandwiches the rest of the week.
These are fresh eggs I picked up from an Amish farm in Daviess County, Indiana, perfect for an egg sandwich. Rosanna's biscuit recipe makes really small, soft biscuits so I think one morning I had two breakfast sandwiches:( Not good for the waistline, but great for the comfort food category. Yum!

Hang in there with your diet. It is so hard to loose weight but I know you can do it. I also drink ice tea but I make my own. I also like instant Lipton tea with lemon.
So sorry to hear about your Grandmother hope she is able to be well and rally round.

Kevin, I just got a book by peter walsh LOSE THE CLUTTER LOSE THE WEIGHT. having gone thru 3 deaths, (and the stuff that goes with that) major office remodel and adding of others needs to that, personal surgeries, hsb medical issues I have to confess to the clutter buildup physically and mentally I am pinning hopes on this as well as most importantly prayer. most will happily support prayer support for just about any health issue but wince when needing it for overcoming weight issues that so heavily impact out health.

Brenda, I do think there is something to that....clutter can impact a lot of avenues in one's life....and I think mine is cluttered up too much...Let me know how things go for you!

I am sending you a comment on your post for Sky High Biscuits. I looked at the recipe, and My Moms was different. When I was a little girl, I watched my Mom make biscuits, They were taller then yours, My Sis only would eat both ends, of which I didnt like the crusty, I ate the middles. My Moms, was made with Buttermilk, and I like to see how the Baking soda would froth and foam when she put it into the Buttermilk, she would quickly put into the flour ingredients, on floured board cut them, dip them in the bacon grease on the pan, turn upward and bake in real hot oven. They were great, lightly crusted on both ends and the middles was flakey and light. I realize she made Buttermilk Biscuits, but if you have the recipe, or maybe a fellow member might have it, please share it with me. We go to Shipshawana, Indiana every year, for the foods items, etc. We are from Indiana, I dont know if My Moms recipe was a hand me down, since only her Aunt made them too, or if it might have been on flour etc. I enjoy your article, stories, and recipes, keep up the good work.
