Dill is a favorite flavor among Amish cooks. It’s easy to grow and is a very versatile herb. Dill finds its way into salads, dips, onto potatoes, and into soups. And when dill meets another popular Amish edible – chicken – the results are extraordinarily tasty!
Chicken is so popular on Amish farms for the same reason it’s popular on non-Amish plates. The meat is very versatile, can be baked, fried, broasted, steamed, grilled, and it can be flavored in so many ways: seasonings, marinades, liquid smokes, spices, and on and on and on. It can be paired with vegetables, part of a salad, the main course, whatever you want, chicken can do.
For the Amish, another plus about chicken: accessibility. Most Amish farms have some hens and roosters walking around. Supper could be sauntering outside in the driveway. Butchering chickens is a messy job, so often times an Amish community will make an “event” out of chicken butchering so that many people can gather together and make the work a lot lighter. Breasts, thighs, and drumsticks are all popular pieces of meat from a home-butchered chicken. I supposed to accessibility of the meat is one of the reasons why, at least in my experience, I’ve not heard of places like KFC or Popeyes’ being popular among the Amish. They have plenty of chicken at home, no need to visit the Colonel.
Anyway, when you combine chicken and dill, you get a very flavorful supper that is popular in Amish farms. This recipe comes to us from an Amish woman in Oklahoma
Oklahoma has a relatively small Amish presence, I’ve never been there, but I think the two communities that I know of are relatively progressive. The Amish in Oklahoma, for instance, use tractors from what I have heard and that is relatively unusual among the Amish.
