There really isn't an Amish connection to this recipe, it's just a fun, colorful cookie to share with you. Â Most Amish cooks - most - don't regularly use boxed cake mixes. But they do on occasion. Â I mean, the general culinary cultural tendency is for most Amish cooks to be scratch cooks, but everyone - Amish, non-Amish, etc - occasionally has to cut a corner for speed's sake or just doesn't have time for scratch cooking. Â That is when box cake mixes come in handy and sometimes you can use boxed cake mix to make cookies. Yum!
These were recently served at a friend's birthday party. Yum
- 1 box strawberry cake mix
- 2 eggs
- ½ cup oil
- FROSTING:
- 1 stick butter
- 1 lb powdered sugar (give or take a little depending on desired consistency)
- 1 teaspoon vanilla.
- Mix all together and drop by tablespoon onto lightly greased cookie sheet about two inches apart and bake at 350 for 6-10 minutes or until cookies start to crackle on top.
- FROSTING: Beat softened butter, then add vanilla and mix. add powdered sugar little by little and beat til mixed in. Decorated with candy hearts.
