    Summer Chicken Mozzarella Salad

    Summer Chicken Mozzarella Salad comes to us from a Brethren family in Kansas. The Brethren church resembles the Amish in that its members dress plainly....women often wear head-coverings and men plain dress. But beyond that the similarities are sparse.

    This recipe is a fun picnic-type recipe because it's got some chips thrown on top for crunch. Who wouldn't like that? You don't see a lot of Amish recipes with chips on a salad, but among the Brethren, you'll see a more mainstream style.

    The Brethren church has outposts in California, Kansas, Indiana, Ohio, and Pennsylvania. Many are still farmers. And this chicken mozzarella salad has proved popular among the Brethren, especially during summer, here is what is said about it:

    We had Chicken Mozzarella Salad at least two times last week because it’s so fast and the ranch dressing really has an illusion of cooling! It doesn’t take any time at all to grill the chicken while you’re chopping the lettuce, and speedy suppers are important when we don’t get done with farming until 8:30 pm! This salad has been popular in our community for several years. I’ve eaten it everywhere from California to Ohio.

    I can see how the ranch flavoring would add a cooling touch on a warm summer day and, yeah, this would be a quick, convenient meal. You could cut corners further by buying pre-cut bagged lettuce!

    Cook chicken breasts.

    🥗 Summer Chicken Mozzarella Salad Ingredients

    1 head lettuce, shredded, or the equivalent in spinach or other greens

    2 c. mozzarella cheese, shredded

    1 ½ cans (6 oz) black olives, whole

    1 lb chicken breast (or thighs) cooked, chopped (or 10 oz canned chicken)

    ½ bag ranch-flavored tortilla chips, crushed

    16 oz Ranch salad dressing

    📋 Instructions

    Cook the chicken until tender. 

    Cool to room temperature. 

    Put chicken into a big bowl and then add greens, cheese, olives, chips, and dressing. 

    Toss well.
