Sweet potatoes are a staple on the menu of most Amish Thanksgiving suppers and, of course, they are staples on non-Amish menus as well. I'll still never forget being sent to the grocery store by my wife the day before Thanksgiving three years ago and I got some of the last cans of sweet potatoes on the shelf. The one can that remained, two ladies started getting very testy at each other over who would get the last can. I didn't stick around to see how their argument turned out. But here's one thing that is no argument: thinks Sweet Potato Casserole is an Amish classic.  Thank you reader Barbara for testing it out. Her husband tasted it and said "Now this tastes like Thanksgiving." Enjoy!

Into the oven....
And onto the table. Yum!
- SWEET POTATO CASSEROLE
- 4 cups mashed sweet potatoes (2 3 /4 pounds before peeling)
- 5 tablespoons butter, melted
- 2 beaten eggs
- 3 tablespoons brown sugar
- 2 tablespoons flour
- 1 teaspoon salt
- 1 /2 cup milk
- Topping: 1 /2 cup brown sugar, 1 /4 cup flour, 2 1 /2 tablespoons butter, 1 /2 cup chopped pecans. Combine sugar, flour, and butter to make crumbs Add pecans.
- Combine all ingredients and put in shallow 2 quart baking dish.
- Make topping and sprinkle over casserole.
- Bake at 350 for 25-30 minutes.
- Serves 10-12

And if you are searching for something a bit more inventive this recipe, also tested by Barbara, may be worth a look. It wasn't Barbara's favorite and it was a bit labor-intensive, but still might be worth a try, although she said this recipe only made 7 sweet potato balls. I am absolutely in love with anything coconut and that seems to be a "love it" or "hate it" thing, so if you love coconut and sweet potatoes, this one is for you!
Mennonite Sweet Potato Balls
- 2 cups mashed sweet potatoes
- 1 /2 teaspoon salt
- 2 tabespoons melted brown sugar
- 3 tablespoons brown sugar
- Mix all ingredients well in a bowl.
- Wrap a tablespoon of the mixture around a large marshmallow.
- Roll balls in grated coconut or crushed corn flakes or chopped pecans.
- Place balls into a greased casserole dish.
- Bake at 350 for 10-15 minutes.
- Be careful not to melt marshmallows.
- These freeze well.
- Take from the freezer and pop into the oven.
