The Amish Cook - Blueberry Banana Bread

Ingredients
- BLUEBERRY BANANA BREAD
- 2 cups flour
- 1 /2 teaspoon salt
- 1 cup sugar
- 2 tablespoons vanilla
- 1 cup fresh blueberries
- 1 teaspoon baking soda
- 1 /2 cup shortening
- 2 eggs
- 2 medium ripe bananas, mashed
Instructions
- In a bowl, combine flour, baking soda, and salt. Add eggs and vanilla. Mix well. Beat in bananas. Gradually add the rest of the ingredients, beating just until combined. Fold in blueberries. Pour into 3 greased loaf pans. Bake at 350 for 30 – 35 minutes.
- Editor's hint: I added an extra egg because the batter seemed a bit crumbly still and I put all the batter into one 10.5 X 6" loaf pan. Use three loaf pans only if you are using the tiny ones. I also added a few more blueberries than a cup, but that's just me...I like my bread bursting with berries!:)

I'm always surprised of the lack of vegetables on the menus Lovina posts about. No beans, no corn, no stewed tomatoes, no peas, no cabbage, no squash! This particular menu seems to be heavy on the starch!

There were both salad and mixed vegetables (we don't know what manner of mixed, but still) at the wedding lunch and dinner. Keep in mind that these folks do very physically demanding labor all day long (and that animals dont care if its the weekend ~ they still have to be tended). They don't sit at desks all day typing on computers, then have to go to the gym to work out. They earn every calorie they consume.
The starches they eat get used up, and right quick, by their bodies to keep them going through these hot summer days...and the cold winter ones! :o)

This looks so good. Blueberries are a big hit in my house and I have a couple of quarts. Guess I'm going to have to get some bananas...extra ones anyway. Blueberries and banana's don't last in this house. I'm going to make the time on Saturday to make this with my granddaughter. She loves to bake and cook.

I made this tonight and it came out great. I used 2 eggs, and butter instead of shortening. I also used a 12"x4" ceramic pan, so it took about 20 extra minutes to bake. (I took a picture, but I'm not sure how to send it.)
When I make it again, I'll mix the eggs, sugar, butter, and banana together before adding them to the dry ingredients. I just think it would be easier to mix.

I just received the book about Amish cooks across America. It looks so great that I wanted to know more about Lovina Eicher. She lives in Michigan. Can you tell me where? I am also from Michigan and grew up in the Pigeon area - where there were a lot of Mennonites and we were friends. Now I live in the Cadillac area and there are many Amish around here. When my husband worked in Waukarusa, IN, I became interested in the Amish way of life. I went to Shipshe quite often to the flea market, but have not been there lately. In what newspapers is the column, The Amish Cook, in? Are there any newspapers in Michigan? Is there any way I could subscribe to any of the newspapers? Since I am not Amish ( I belong to the United Methodist Church ), I do not know if the Amish share any of their writings with Englischers. I was surprised that Lovina was Amish and able to write for others to read.
