    The Amish Cook: Breakfast Favorites!

    Daniel and I both enjoy hosting guests at our house for food and fellowship.  In our church a noon meal is served every other Sunday by the family who is hosting services.

    The Sundays between the fellowship meals at church give us the perfect opportunity to invite friends and family for lunch and spend the afternoon with them.

    Daniel and I both love breakfast so we enjoy serving a Sunday brunch   An apple-sausage ring filled with scrambled eggs never fails to top off the  menu.

    Daniel’s motto is “Keep It Simple.”  So thanks to his reminders they remind me not to spend too much time on little details or imperfections that could so easily cause stress on my meal preparations. Rather than preparing an extravagant dessert, for example, I usually mix up a batch of smoothies or fruit filling with the waffles.

    APPLE VENISON RING

    This is a dish that is elegant yet filling.  I usually use venison for this, but you can use sausage or a blend of the two.

    2 pounds venison or sausage

    1 /2 cup chopped onions

    2 eggs

    1 cup grated apples

    1 /2 cup crushed crackers

    ⅓ cup barbecue sauce

    2 teaspoons salt

    ½ teaspoon black pepper

    1 teaspoon ground sage

    1 teaspoon liquid smoke (optional)

    Line a ring mold with plastic wrap.

    Combine all ingredients and press firmly into mold. Chill several hours. Unmold onto a greased baking sheet with rimmed edges. Remove plastic wrap. Bake at 350 for 1 hour. Transfer onto lettuce lined serving platter and fill with scrambled eggs if desired. Tasty and attractive!

     

    .  DANIEL’S WAFFLES

     Daniel’s waffle recipe has proven to be quite a hit. I am spoiled when it comes to preparing them. Daniel is a pro at knowing how long to cook eat waffle on our gas stove top resulting in waffles consistently toasted to a perfect golden brown.

    2 eggs, beaten

    1 1 /2 cups milk

    1 /2 cup butter, melted

    2 teaspoons sugar

    1 tablespoon baking powder

    1 /2 teaspoon salt

    2 cups flour

    Whisk wet ingredients together, then mix in dry and stir until combined. Some tips to consider while making these: don’t over-combine after adding dry ingredients. Also, Daniel has discovered that it works best to brown the waffles for 1 minute, 30 seconds with an additional 1 minute, 45 seconds on medium heat on the second side. It toasts them to a nice, golden brown.
