    Weekend Recipe Round-Up: Taco Skillet Casserole, Amish Ham & Potato Casserole, Five Chip Cookies, and Peanut Butter Cake Bars

    These recipes all come to us from the Amish settlements in Oklahoma. An Amish woman was nice enough to send them to me.  Tex-Mex influences are definitely visible in the selection of recipes she gave me (she sent me many,but I am posting just four for today).  The taco skillet sounds like a great Tex-Mex meets Amish concoction.   Hispanic influences have definitely added a twist to traditional Amish cooking.The ham and potato casserole is quintessential Amish comfort food.  The ham would come from their own home-raised pork.  Potatoes would likely be home-grown.  So the flavor of the below recipe I imagine would be "fresher" coming from an Amish home than if you go out and buy ham and potatoes, but it still sounds good either way.   The dessert recipes below...well, they speak for themselves: YUM!:)

    HAM AND POTATO CASSEROLE

    6 cups potatoes, cubed

    1 1 /2 cups ham, cubed

    2 tablespoons butter

    4 tablespoons flour

    2 ½ cups milk

    2 1 /2 teaspoons salt

    1 /8 teaspoon pepper

    1 onion, chopped

    3/ 4 cup American cheese

    Mix together ham and potatoes in greased baking dish.  Mix flour, salt, pepper, butter and onions in a sauce pan.  Bring to a boil and add milk and cook until thickened.  Add cheese slices and melt.  Pour over potato mixture.  Bake at 375 for 1 1 /2 hours or until potatoes are tender.

     

    TACO SKILLET MEAL

    1 pound ground beef

    1 pint tomato juice

    ¾ cup water

    1 package taco seasoning

    2 tablespoons brown sugar

    1 cup rice, uncooked

    1 cup shredded cheese

    shredded lettuce

    chopped onions

    sour cream

    salsa

    Brown ground beef in a large skillet; add tomato juice, water, brown sugar, taco seasoning and rice.  Simmer for 20 minutes or until rice is tender.  Top with cheese and let it melt. Serve with lettuce, onions, sour cream and salsa.

     

     

    FIVE CHIP COOKIES

    1 cup butter

    1 cup peanut butter

    1 cup sugar

    ⅔ cup packed brown sugar
    2 cups flour

    1 cup rolled oats

    2 eggs

    1 teaspoon vanilla

    2 teaspoons baking soda

    1 /2 teaspoon salt

    2 /3 cup milk chocolate chips

    ⅔ cup semi-sweet chocolate chips

    2 /3 cup peanut butter chips

    ⅔ cup vanilla chips

    2 /3 cup butterscotch chips

    In a mixing bowl, cream butter, peanut butter, and sugars.  Add eggs one at a time, beating well after each addition.  Beat in vanilla. Combine flour, oats, baking soda and salt. Gradually add to creamed mixture. Stir in chips. Drop by rounded tablespoon 2 inches apart onto ungreased baking sheet. Bake at 350 for 10-12 minutes or until lightly browned.  Cool for a minute or two before transferring to wire racks.

    PEANUT BUTTER CAKE BARS

    2 /3 cup butter, softened

    1 cup sugar

    4 eggs

    2 cups all-purpose flour

    1 /2 teaspoon salt

    2 /3 cup peanut butter

    1 cup packaged brown sugar

    2 teaspoon vanilla

    2 teaspoon baking powder

    1 package milk chocolate chips

    In a large bowl, cream the butter, peanut butter, and sugars. Add eggs one at a time, beating well after each addition.  Beat in vanilla. Combine flour, baking powder and salt.  gradually add to creamed mixture. Stir in chocolate chips. Spread into a greased  9 X 13 pan. Bake at 350 for 45-50 minutes.  Cool. Cut into bars.
