DISPATCH FROM AMISH COUNTRY: Bruce Stambaugh writes a great blog set in Ohio's Amish country in Holmes County. He recently wrote a post that describes the late autumn activity of the area Amish. His post made me want to get in my car and just lose myself in those beautiful Holmes County hills. AN AMISH VETERINARIAN? The Amish typically don't pursue education beyond the eighth grade and that shuts them out of many professions. But there's been at least one recorded instance of an Amish veterinarian. 100 years ago an Amish man by the name of Rufus Beachy practiced veterinary medicine near Meyersdale, Pennsylvania. It appears he belonged to the Beachy Amish Mennonite church, but back then it was very similar to the Amish, even more so than it is today. UNCOOKED PEANUT BUTTER FUDGE: No-bake recipes have a rich tradition in Amish kitchens. This is an Amish recipe made by Patricia at the Patchwork Quilt blog. She always seems to have some club, gathering, etc to make these things for and that's a good thing, if I tried making all of these at home, I'd eat them myself, and I'd be 200 pounds heavier than I am now. AMISH PUMPKIN CUSTARD PIE: I know we're past the pumpkin peak now, but I am sure some people still make the pie for Christmas gatherings before all of our cans of Libby's pumpkin disappear back into our pantries for another year. Check out this yummy recipe.
