Beef Noodle Casserole

Amish Egg Noodle and Beef Casserole

Ingredients
  

  • 16 oz egg noodles
  • 1 pound ground beef or 1 package Boca veggie crumbles
  • 2 teaspoons olive oil
  • 1 medium white onion, diced
  • 2 garlic scapes, diced, or you could use 2-3 cloves of garlic, minced, if you don’t have access to garlic scapes
  • salt and pepper to taste
  • 1 14.5 ounce can diced tomatoes
  • 1 24 ounce jar vodka pasta sauce
  • 2 teaspoons Italian seasoning
  • 2 cups shredded cheese
  • Cooking spray

Instructions
 

  • Spray a 9 x 13 baking dish with cooking spray.Preheat oven to 400.
  • Boil water to cook the egg noodles. Cookaccording to package directions.
  • While noodles are cooking, add olive oil to alarge skillet on medium heat.
  • When skillet is warm add diced onion and garlicscapes or minced garlic.
  • Add ground beef or frozen Boca crumbles. Season with salt and pepper to taste.
  • When warmed through – or beef cooked - and onions are translucent, add diced tomatoes and vodka sauce to skillet.
  • Stir to combine.Add noodles to skillet after they are cooked.
  • Stir to combine and transfer mixture to 9x13 baking dish and top with 2 cups shredded cheddar.
  • Bake at 400 for about 15 minutes until cheese is melted.
