The Bishop's Hamburger-Zucchini Casserole

Ingredients
  

  • 1 zucchini shredded
  • 1 large onion shredded
  • ½ pound ground beef
  • 1 tsp salt
  • ¼ cup butter
  • 2 eggs
  • cup milk
  • ¾ cup cracker crumbs
  • ¼ teaspoon pepper

Instructions
 

  • heat butter in large skillet.  
  • add onion and zucchini.
  • In a separate skillet, fry ground beef  till brown. add to zucchini, simmer till soft, add salt pepper.  
  • beat eggs, add milk. blend, then add cracker crumbs. add this to zuch. mixture. zuch. shrinks when cooked.
  • Cook about 20 minutes and serve.
