Summer Peach-Blackberry Crisp

Ingredients
  

  • 1 ½ cups blackberries
  • 4 medium to large peaches
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • ½ teaspoon cinnamon
  • 1 cup oats
  • 1 cup all-purpose flour
  • 1 /2 cup packed brown sugar
  • ½ cup white sugar
  • 1 /4 teaspoon salt
  • ½ cup cold butter
  • Vanilla ice cream (optional)

Instructions
 

  • Preheat oven to 375
  • Grease an 8" square baking dish.
  • Place the fruit into the greased baking dish.
  • Add the white sugar, cornstarch, lemon juice, and cinnamon on top.
    .
  • Stir and set aside.
  • In a small bowl, combine flour, oats, brown sugar, and salt.
  • Cut in butter using your fork or your hands until you get coarse crumbs.
  • Sprinkle over fruit.
  • Bake about 35 - 40 minutes or until golden and bubbling.
  • Serve warm with a scoop of vanilla ice cream
