Simmer ginger, sugar, and water together for 5 minutes.
Add several sprigs of mint tea and let set around an hour.
Remove mint and refrigerate till ready to use. Place 1 cup ice cubes in each of 3 glasses.
Take 1 unpeeled wedge lime, give it a little squeeze, and toss in each glass.
Next add 1 mint leaf, crushed, and 1 cup sparkling white grape water, and 2 tablespoons sugar/ ginger mixture.
